Summer Fresh Pasta.....Enjoy!!

Is hosting a Pasta Recipe Extravaganza...

I agreed to post my favorite Pasta dish...

I hope you all enjoy this relativately easy recipe...

A lot of prep work, but can be done ahead of time, if you are preparing for guests...
 

List of ingredients...
1. 6 large Garlic cloves...
2. Cherry Tomatoes...
3. Zucchini....
4. Sausage...
5. Pasta...{spaghetti}...
6. Fresh Basil...
7. Sea salt....
8. Pinch of red pepper flakes...
9. Parmesan Cheese... 


Pretty simple so far, eh???







Method:
1. Smash and peel the garlic...then mince
2. Quarter Tomatoes...about 2 cups...you be the judge...it is really up to you..
3. Dice Zucchini...
4. Cook and dice Sausage...whatever you like...Cherizo,Italian...
5. Heat Olive Oil {about 4 tbsps} in large non-stick skillet...{I have one with a lid}...
6. When oil is hot...add garlic and a pinch of red pepper flakes...cook until just soft..
7. Add zucchini, sausage, and a few torn Basil leaves...
8. Add tomatoes...toss...turn heat down and cover...
9. Boil a large pot of water, with lots of sea salt...
10. Add pasta...when al dente...scoop about 1 cup of pasta water into the tomato mixture...
11. Drain pasta...and add to vegetable mixture...
12. Incorporate well...add more torn basil leaves, and a generous shake of Parmesan cheese...
13. Serve....
14. Stand back....and ready yourself for several standing ovations!!!

I like to serve my Greek Avacado salad with this dish...

Keeping with the fresh theme!!!

Fresh Tomatoes,Avacado,Goats Cheese,Freshly sliced Red Onion, Black olives,Fresh Basil,Olive Oil, Freshly ground Black Pepper...

And of course...

Fresh crusty bread...

Dipped in olive oil, and an herb mixture I make...

This dish can also be Vegetarian, by omitting the sausage...which I do quite often...

It could also be gluten-free, by using Gluten-free pasta...

   Roasted Peameal Bacon....

            Creamy Scalloped potatoes...

               Fresh brocolli....salad of some sort!!!

Will be baking my Sour Cream Coffee Cake this afternoon...

              didn't have enough brown sugar...used most of it in my apple pie bread...which is gone!!!

  1. My step-daughter was here last night and she is vegan and also does not eat wheat and about 100 other things. I made a vegetarian sauce and severed it over quinoa. I made it too spicy for her though and had to remake it.

    1. Well...Amy...Those bowls...8 in total...were FREE!!!!! Siting at the side of the road out by the cottage...of course, they came inside to live with me!! haha!
      They are so handy...a great size!!

  5. As soon as I saw that beautiful garlic I knew I was in for a treat! (can garlic be beautiful I wonder:) Just the right dish for the Pasta Party Linda. It looks so refreshing yet hardy and comforting no matter what Mother Nature throws our way. (chilly I hear is on the way:)

  14. Interesting. I've been watching Pioneer Woman on the food network and she has some excellent pasta dishes in her 16 minute meals repertoire. Since I'm fresh out of ideas these days, I should get back into the groove. Thanks for the inspiration.
