Anyone For Bruschetta?



For as long as I can remember...

Which...by the way...

Is really long!!!

My boyfriend and I...

Always eat in the Dining Room on Friday nights♥

And...

We usually don't eat until at least 7:30pm...

Sooooo...

Yesterday...

I thought..."How about some Bruschetta as a late afternoon/early evening appetizer?" 

Okey Dokey...

Lindy...:o)



I am sure you all make this from time to time...


But...I thought..

I would share...

My recipe with you!

2 plum... very ripe tomatoes...

1green onion...

A clove or 2 of garlic...

Parmesan cheese...

A pinch of hot pepper flakes...

A splash of Olive oil...

Fresh Basil...

Pinch of sea salt...

Freshly ground black pepper...

Oh yes....a fresh crusty loaf of bread of your choice...

                                           ********

Dice your tomato...thinly slice your green onion...finely mince the garlic...

Add the other ingredients...

Give a good stir...and then leave her alone for a while...

Let her stew in her own juices....so to speak!!!

Pile atop a fresh slice of bread...

And catch all the falling tomatoes with your other hand!!!

Some people heat the slices up..and top with Mozzarella...

I prefer the bread un-toasted...so...that is how it is served here!!








I know that you also all know....NEVER....NEVER....NEVER...

Refrigerate tomatoes....they lose all their flavor...but..I know...you knew that!

And...what we didn't finish yesterday...

I used as the base for Pizza for tonight...

Merely added some goat cheese...black olives..smoked salmon{for my boyfriend}

All atop a fresh Focaccia bread....YUMMY!!!!

Weather here was pretty darn miserable...a few sunny breaks...gusty winds...

And a few flurries...but nothing stuck!

I guess it was a skif of snow!!!

We did manage to squeeze in a walk around 3pm....

    I have never made my own Bruschetta.
    I would like mine toasted with mozzarella cheese on top.
    On this cold day I am grateful for a fire in the wood stove.
    The wind is relentless!

    Oh dear, I've never made Bruschetta ... what does that say about me ...
    It's really chilly here this morning, -21 Celsius with wind chill, but the sun is trying hard to break through and make it look like it is a nice warm day!

  5. lovely. even pitiful non cook that i am . . . i'm thinkin' even I could do THAT!!! or at least try. LOL.
    i like bruschetta. i've only had it twice in my life. once at private party and the other at a restaurant. YUM.
    what I REALLY like are your gorgeous pictures that make it all look SO incredibly delicious.
    i wonder.
    does the boyfriend realize what a lucky husband he truly is? i'm sure he does or you wouldn't have kept him around this long! LOL.
    a walk in the snow together and crispy air . . . bruschetta at the dining table with probably candlelight and your beautiful table as always . . . and a fire in the fireplace . . .

  6. LOVE bruschetta at our Casa also! Like our bread toasty for the crunch with the room temp tomatoe mixture ... your photos made my mouth absolutely WATER!! Might just have to squeeze that in to our Thanksgiving Day feast ... a little "before the stuffing" stuffing! LOL Linda

  10. Yummy. I've never made brushetta. It looks so good and so does that crusty bread! I don't know how I missed this post and the one for Sunday but I've been busy decorating the tree. All done! So, It was nice to see your day dreaming photos today. It was cloudy and gusty cold windy again today with a few snow squalls thrown in. Rain coming for Wednesday and 14 degrees!! Ridiculous! Good night.

      We are picking ours up on Thursday...and then decorate on the weekend♥

  11. No, not Canadian though my mother says I was "conceived" in Canada WAYYYYY back when she and my dad were first married and on a vacation ... born/raised in Chicago and lived in many places before retiring to Northern Michigan ... does that qualify me as a partial Canadian?? LOL
