Latest From The Beach...and...Lots Of Food!

 Hi Everyone......

Me again....checking in!

Weather has been fantastic....lots of warm Sunshine...and plenty to eat!

I will have to go on a strict diet when I get home! Hahaha! 😳
We had hotdogs for lunch the other day...so delish....not something we usually eat!

I did Cajun catfish the other night...with grilled veggies and rice....really good!

Grilled pork tenderloin, with smashed potatoes...grilled peppers, and asparagus....yummy!

Of course....my fav BURGERS with Greek salad and avacadoes!

Ok....now you see why I need to go on a diet!

Been walking a lot....but I guess the food is catching up to me!

Oh well.....there will be lots of chores at home to keep me active.....right?








Started another blanket....loving the grey/blue tones...may need to pick up a few balls of yarn here....

I alway miscalculate how much I need.

Ok....I am off for a walk...hahaha! Had berries and yogurt for breakfast...

  1. Love all the yummy food pics! I want to try your cajun catfish...will look for that seasoning mix at the grocery!
    Did you dredge it in a flour mixture and pan fry or bake it? Looks scrumptious!
    Nothing like dipping your toes in the tide at the beach. Love that. I'm living vicariously, so keep posting pics! haha....we have snowflakes!

    1. Just the Cajun seasoning Betsy...no black iron frying pan here, so I melted some butter in my trusty grill pan, and fried it in there!
      I usually bake my fish, but the catfish is better fried! Let me know if you try it!
      The water is nice and warm this year...very refreshing!
      Sorry about the snow! Less than 2 weeks left for us 😕

  2. Yummy food, vacations are for eating and relaxing, lots of time to worry about weight loss when you get home. And once you start running around with Miss V you will lose it all. Lovely sea birds, I spy an oyster catcher.

  4. Wow....you have a serious suntan!! Looks like you are enjoying the food.....two hotdogs are not allowed per person you know...especially with sides!!!! Get your butt on that beach and walk! You will be fine....just pullin' your chain a little....you two look great and happy....that's what counts in my books!

      I like that afghan, but I surely don't have enough yarn to continue the colour combo...might just switch gears a wee bit!

Hey that's funny we call them smashed potatoes to lol !The weather has cooled down here but still no snow on the ground thank goodness and the sun has been shining every day !       As there is no potato masher here, I use a fork and "smash" them. Added a few dollops of fat free sour cream...delish!
      Yes...save me a spot! Preferably waaaaay in the back! 😬
