Buttermilk-Blueberry Breakfast Cake....

 This is the second time I have made this tasty cake....


SO...I figured it was time to share with all of you...

Pretty straighforward...

Easy ingredients....

Super delicious...

Sort of....like....a biscuit quality...but very moist and melt-in-your-mouth delicious....


  SO here goes...

1/2 cup unsalted butter..room temp

2 tsp. lemon zest or more...zest from 1 lemon..

7/8 cup + 1 tbsp sugar**[3/4 cup + 2tbsps for sprinkling on top]

1 egg...room temp

1 tsp vanilla

2 cups flour

2tsp baking powder

1 tsp kosher salt

2 cups fresh blueberries

3/4 cup buttermilk

1. Preheat oven to 350 degrees

2. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy 

3. Add the egg and vanilla..beat until combined...

4. Toss the blueberries in 1/4 cup flour...then whisk together remaining flour, baking soda and salt  

5. Add the flour mixture to the batter a little at a time...alternating with the buttermilk...Fold in the Blueberries..

6. Grease a 9 inch square baking pan with butter or non-stick spray...spread batter into pan..sprinkle batter with remaining sugar...

7. Bake for 35 minutes...check with toothpick for doneness..note: baking for as long as 10 minutes more might be necessary ..let cool for 15 minutes..

  








 This cake is a real crowd-pleaser...

The lemon zest really adds a delicate flavor...

This is a must try...

    NOW as to this breakfast cake...you are KILLING me! hahaha..OH MY! Thank looks scrumptious. And yes, you knew I'd love it...love anything moist and made with buttermilk...and of course lemon and blueberry together is wonderful. I'm making this as soon as I get a lemon. :)

  3. Off to the farm shop........ on to it, very mouth watering. I make buttermilk scones and the family love them. I have a feeling that they will think I am Nigella when they see this one !

  5. You share the bestest recipes. This is another one I must make. I did do the apple pie one and it was a bit hit, but think I ate too much of it! :) Blueberries are on sale this week at No Frills. Hm-m-m does this mean another trip to the grocery store?

    1. Thanks Linda...We did have a good time...buy lots of blueberries and freeze them..altho' this recipe is best with fresh..they hold up better..
