It is snowing here again!!!
Time to make a yummy lemony treat!!
LEMON BLUEBERRY YOGURT BREAD
~~~~~~~~~~~~~~~~~
DRY WET
1 3/4 cup flour 1 egg beaten
1/4 cup sugar 1 cup milk {I used 2%}
1 tsp baking powder 1/4 cup melted butter
pinch of salt 1 tsp each lemon zest and juice 1/2 cup yogurt{I used no fat vanilla}
1 cup fresh or frozen blueberries
***for some unknown reason the yogurt is not showing up...I have tried to fix this...won't work!...I used non fat vanilla yogurt...you can use plain...***
ICING
1/2 cup confectioners sugar
1 tsp each lemon zest and juice
2 tsps milk
Combine...stir until smooth...drizzle over warm bread....♥️♥️♥️
Preheat oven to 350*...
Grease 9x5 loaf pan...
Combine flour,sugar,baking soda and salt in large bowl...
Make a well in centre...set aside...
Mix together egg,milk,melted butter,lemon zest and juice...
Pour into well...
Mix until just combined...
Stir in yogurt...
Gently fold in blueberries...
Pour into loaf pan...
50-55 minutes...
Cool on wire rack for 10 minutes...{if you can stand the suspense}
Cool before slicing...{tell us how long you waited}

I screwed up on the icing...
I did not measure the lemon zest and juice...
I just added zest and squeezed the heck out of the lemon!!!
Too lemony for my boyfriend...I forced it down!! {tee hee hee}
I did not glaze the whole cake...
Kept it in a bowl...drizzled mine!
With or without the drizzle...{Hi Wanda...you are still the drizzle Queen!}
This cake delivers a fresh...moist...melt in your mouth experience!!
Right down to the last bite!!

I am almost ready to go and pick up Miss V...
We will be stopping at The Greenhouse {my favorite flower store}...
To pick up a few packs of seeds to plant indoors...
I am thinking sunflowers and pumpkins!!
Nice...big seeds...easy to plant and grow...{hopefully}...

DeleteI have a 'pin it' button on my browser. Otherwise it's simply a case of putting the url into Pinterest, choosing a pic and pining it. It means I can save recipes, interiors ideas, new plants etc all in one place and revisit them often!

Just catching up on this blog and the last one of adorable Miss V. Yum, this recipe looks amazing, will have to try it. Finally arrived home today, after we gave up on the idea of getting home in two days. Yikes, snow on the lawn when we arrived, how upsetting is that? Have a nice rest of the week and let's hope for an improvement in the weather!

Our 2nd day began around Chattanooga and we finally gave up around 7 p.m. and stayed in Chatham, ON. after crossing the border. Thankfully, we share the driving, and I think the same for you and the BF?

Oh No LInda, snow! It's crazy isn't it? We've been on snow alert all week. We went through 99% of the Winter without so much as a flake and here it is April and, well, you know...
ReplyDeleteSounds like a great plan getting some seeds. I've had Mammoth Sunflowers grow as tall as 10 feet plus the seeds are big enough for little fingers:)
