As Promised....Recipe For Banana Cream Pie...

 I featured this pie on my Easter post...

And...

I kept forgetting to share the recipe with you...

SO...

Here we go...

Banana Cream Pie

2 cups milk
2 tbsp flour
2 tbsp cornstarch
1/2 cup sugar
1/4 tsp salt
2 large or 3 medium egg yolks
2 tsps butter
1/2 tsp vanilla
4 large bananas


Make a graham crumb crust...

Heat 1 1/2 cups of the milk...in a double boiler...medium heat

In a seperate bowl...
Mix flour and cornstarch, sugar and salt..add remaining milk..stir until smooth
Add this mixture into hot milk
Cook until thick...stirring constantly...reduce heat   
Cover and cook for 10 minutes...


In a seperate bowl...
Beat egg yolks...stir small amount of hot milk into egg yolks
Then add all to pot...stir until thick...cook for 2 minutes

Remove from heat...add butter and vanilla
Add sliced bananas
Pour into pie plate
Refrigerate...

I topped with a sprinkle of brown sugar...

Enjoy!!!

  2. Rainy, dull and dreary here too. The house is a mess, boxes and books everywhere ready to have new carpets laid on Wednesday. Right now I'm tired of the whole process and wish it was over. Thankfully after tomorrow I can start to put it all back together. It will be what I call a 450 dinner ... chicken strips and fries as there is limited space to prepare anything in the kitchen.

    2. At this point I can't remember what the new one looks like, I'll just be glad when it is over. It is worse than moving. At least with moving the boxes go out to the truck, now they just keep piling up.
      Enough grumbing, I just have to get on with it.

  3. Do you have a gluten free version??? Looks so yummy I may have been tempted to make it but only if it is gluten free. Maybe you could work on that? lol

    1. Funny you should ask!!! hahaha...
      After I made this...I thought...how about just thickening with the cornstarch, no crust....and serve like a pudding!!!
      What do you think of that!!!
